Mario Döring & Michael Hollaus

Head chef Mario Döring was awarded two toques for the Chef's Table in 2017, today he shines with 17.5 points and four toques. His dishes combine regional and international influences and delight guests and critics alike. Every day, he and his team create an eight-course tasting menu, which is complemented by herbs from the restaurant's own garden and hand-picked wines.

Chef patissier Michael Hollaus, named patissier of the year by Gault&Millau in 2021, favours a "simply good instead of complicated" philosophy. His down-to-earth approach does not prevent him from creating innovative sweet creations. He enchants guests with his detailed desserts and cakes, including at Café Wien.

Tony Hohlfeld

Tony Hohlfeld conjures up impressive and innovative dishes at the JANTE restaurant in Hannover by skilfully combining simple and sophisticated ingredients. Each plate captivates with a vibrant and colourful variety of flavours. Head sommelier Mona Schrader complements the creative dishes with a carefully chosen selection of wines to perfectly round off the culinary experience.
Together, they have created a place in the centre of Hanover that invites you to slow down and relax.
Chef Tony Hohlfeld's motivation has always been ambition and innovation. At JANTE, he realises his visions and drives the metamorphosis of culinary art. His well thought-out dishes contain components that have been further developed, because he is enthusiastic about constant change.

Since 2014, he and his wife Jeannine have been running the restaurant, which has been awarded two Michelin stars since 2015. Together with their team, they create an unconventional fine dining experience that celebrates the seasons.
