These star chefs are waiting for you

Mario Döring & Manfred Löschl

For his outstanding cuisine at the Chef's Table, Interalpen-head chef Mario Döring has been honoured with a MICHELIN-star, four Gault&Millau toques (17.5 points) and four Falstaff forks. He combines regional flavours with international accents with great flair - delighting guests and critics alike. Together with his team, he composes a finely tuned eight-course menu every day, refined with herbs from the hotel's own garden and accompanied by exquisite wines.

Chef patissier Manfred Löschl has already achieved great things despite his young age: at 21, he is a master confectioner, and at 23, he is the world's youngest certified chocolate sommelier - a true professional in the sweet arts. His down-to-earth approach does not prevent him from creating innovative sweet creations. He enchants guests with his detailed desserts and cakes, also at Café Wien.

Mathias Seidel

Since 2019, Vorarlberg-born Mathias Seidel has been in charge of the culinary line of the renowned Schlosshotel Fiss as Executive Chef - characterised by a harmonious combination of Alpine tradition and modern sophistication. His fine-dining restaurant, the Beef Club, has received numerous awards: a MICHELIN-star, four toques from Gault&Millau and three Falstaff forks.

Seidel's philosophy is based on close collaboration with local producers and the use of organic ingredients. His dishes are characterised by precision craftsmanship, modern techniques and aesthetic presentation. Whether dry-aged steak from the Big Green Egg or vegetarian surprises - his menus are a feast for all the senses.

Michael Ploner & Olli Mijic

Michael Ploner and Olli Mijic have fulfilled their lifelong culinary dream with the multi-award-winning restaurant s'kammerli in Nauders. In the charming, 400-year-old parlour with just twelve seats, they create a seasonal surprise menu that combines Alpine roots with cosmopolitan sophistication. Their cuisine is characterised by stints at top international restaurants such as Noma in Copenhagen, the Mandarin Oriental in Bangkok and Johann Lafer's Stromburg.

Michael Ploner, national chef champion 2016 and culinary world champion 2018, inspires with his deep connection to Tyrolean cuisine, which he skilfully refines with global influences. Olli Mijic brings a breath of fresh air from the British fine dining scene and complements the duo with creative ideas from different cultures.

The s'kammerli has long been one of the top addresses in the country: 4 toques and 17.5 points from Gault&Millau as well as 16th place in the ‘100 Best Chefs Austria’ underline the exceptional culinary standard.
